Egg and Tomato Scramble
1 Plum tomato; peeled and chopped 1 ts Chopped fresh basil or 1/4 tsp dried 1 Egg or egg substitute equivalent 1 ts Water 1 Clove garlic; minced 1 ts Olive or vegetable oil; optional Salt and pepper; to taste, optional 1 sl Bread; toasted Additional fresh basil; optional In a small bowl, combine tomato and basil; set aside. In another bowl, beat egg, water and garlic. Heat oil if desired in a small nonstick skillet; add egg mixture. Cook and stir gently until egg is nearly set. Add tomato mixture and salt and pepper if desired. Cook and stir until egg is completely set and tomato is heated through. Serve with toast. Garnish with basil if desired. |

Breakfast Tortillas
8 Flour tortillas 1/2 lb Milkd bulk pork sausage 1/2 c Chopped green onions 4 Eggs 2 tb Whipping cream 1/2 ts Salt 1/4 ts Pepper 2 tb Margarine 1/2 c Shredded cheddar cheese Picante sauce Wrap tortillas tightly in foil. Bake at 350 F. for 15 minutes. Combine sausage and green onion in a large skillet. Cook until sausage is browned and onion tender. Stir to crumble meat. Drain well. Set aside. Combine eggs, cream salt and pepper. Beat well. Melt margarine in heavy skillet over Medium heat. Add eggs, cook until firm but still moist. Add sausage mixture and cheese. Stir well. Spoon into center of tortillas. Roll up. Serve immediately with picante sauce |

Sausage Cups And Scrambled Eggs
-----SAUSAGE CUPS----- 1 Lb Pork sausage meat 1/2 C Quaker Oats, uncooked-- (quick or old-fashioned) 1/2 Ts Salt 1/2 Ts Rubbed sage 1 Egg 1/2 C Milk -----SCRAMBLED EGGS----- 1 Tb Butter or margarine 9 Eggs 1 T Salt 1 D Pepper (optional) 1/3 C Milk For sausage cups, combine all ingredients thoroughly. Firmly press into six 5-oz. ovenproof custard cups. Place in shallow baking pan. Bake in preheated moderate oven (350 F.) about 45 minutes. Unmold; drain on absorbent paper. For eggs, melt butter in large skillet over low heat. Beat together eggs, salt, pepper and milk until fluffy. Pour into skillet. Cook, stirring lightly until eggs are just barely set. Arrange sausage cups around eggs on serving platter. Garnish with parsley. |

Sausage Breakfast Ring
2 Lb Lean unflavored bulk sausage 2 Lg, eggs 1 1/2 C Crushed butter crackers-(Ritz or HiHo) 1 Grated apple, peeled 1/2 C Minced onion 1/4 C Milk Combine all ingredients, mix well and press into a ring mold lined with wax paper or plastic wrap. Chill overnight. Unmold, removing paper. place onto baking sheet with raised edges. Bake at 300 degrees for 1 hour. Suggestion: Fill center ring with scrambled eggs before serving. |
